About Us

Born and raised in New York City, Chef Craig learned to cook at the knee of his grandparents, Nonna Luigina and Nanno Giuseppe, who owned a neighborhood Italian restaurant and deli. His family also owned Papa Leone Italian restaurant in Brooklyn, New York, which was open for 45 years as well as Ristorante Cassale in Castrofilippo, Sicily, which is still operating after more than 4 decades in service. After graduating from Jacksonville University with a degree in Business Administration, Chef Craig combined his passion for cooking along with his business prowess and began operating the family restaurants in New York. In addition, Chef Craig consulted and operated other locations, such as Sorvino's Italian Restaurant with actor Paul Sorvino, Gregorios East, and the Riese Organization with over 200 locations in NYC, to name a few. More recently, Chef Craig was recruited in 2015 as the Executive Chef of E11EVEN Ultraclub, a 24/7 rooftop restaurant and lounge in Downtown Miami, which was named one of the top 10 clubs in the world! Taking charge of a 24-hour kitchen, Craig was responsible for creating and managing 5 different menus and event spaces including everything from formal sit-down dinners for 100+ people, to a high end menu of late-night tapas for the Ultra Club.
